Poached fresh steelhead
Garlic roasted free-range chicken

Tuesday, July 16 
Crudité (Including celery root, carrots, green beans, cabbage, and beets) 
Mixed local organic greens
Fish mousse in filo pastry (or puff pastry)
Paella-style rice (including some meat and vegetables)
Fruit salad

Wednesday, July 17
Local mixed tomatoes in salad 
Macédoine of vegetables (cauliflower, new potatoes, carrots, poached eggs, peas, and beans in fresh mayonnaise) 
Pan-fried fresh cod or other white flesh fish
Curry of lamb and vegetables
Warm apple pie

Thursday, July 18 
Mixed local organic greens
Greek-style salad with feta cheese
Tomato and zucchini tart
Stuffed breast of chicken, oven-roasted or pan-fried
Almond raspberry tart

Friday, July 19 
Niçoise-style salad (Boston lettuce, baby potatoes, green beans, eggs, and tuna or salmon)
Rack of lamb provençal style 
Strawberry shortcake
