Led by Audra Wolfe, a founding participant in Canning Across America, you learn a variety of food preservation methods to extend the local harvest year-round, including water-bath and pressure canning, dehydrating, fermenting, pickling, and dry storage. Through lectures, demonstrations, and hands-on exercises, you gain an understanding of the tools and equipment necessary for each food preservation technique and practice preserving a variety of local foods. You also learn safety considerations for making jams and jellies and receive guidelines for choosing the best preservation method for different foods. You return home with easy-to-follow recipes and the ability to fill your pantry with savory and nutritiously preserved local foods that you can enjoy all year.
