Healthy Veggie Pizza

This vegetable crust brings new meaning to "veggie pizza" in this recipe from Jon Gabriel, creator of The Gabriel Method™.

 

You don’t necessarily have to give up your favorite foods when you are looking to eat better. Sometimes you just need to find a healthier version.

This recipe may be the world’s healthiest pizza, according to Jon Gabriel. He says the egg yolks are a more complete protein that contain healthy fats and are easier to digest than other proteins, and the psyllium husk—a form of soluble fiber made from the husks of seeds from a type of plantain—helps bind the crust.

Makes 4 10-inch pizzas

Ingredients

  • 1 head of cauliflower
    1 onion
    12 egg yolks
    1 teaspoon of Himalayan salt
    1 cup of organic psyllium husks
    2 tablespoons of ghee
    Pizza toppings of your choice (see directions)

Directions

  1. Preheat oven to 410 degrees. In a food processor, blend the cauliflower and onion until it makes a fine powder. Transfer the mixture into a bowl and combine with egg yolks, salt, and psyllium husks. Add two tablespoons of ghee. Spread evenly on a pizza stone or pan and cook for 10 minutes or until golden brown. Remove from the oven, flip it over, then cook again for another 5 minutes.

  2. Once the crust is made, top the pizza with organic pasta sauce and add your choice of healthy vegetable toppings, like tomatoes, mushrooms, onions, peppers, avocado, or raw goat cheese.
