There are so many misconceptions about home canning and preserving. It’s hard. It’s expensive. It requires tons of sugar. You need a lot of specialized equipment. But with just a bit of information, canning becomes entirely approachable and fun. And there is no kitchen skill more empowering than preserving seasonal produce for use throughout the year.
In this workshop we learn a variety of food preservation skills, including how to set up a boiling water bath canner with equipment already on hand, how to use a slow cooker to make fruit butters without adding sugar, and how to safely preserve homemade soups.
Through hands-on kitchen activities, discussion, and demonstration we:
- Address issues of food safety so you feel entirely comfortable eating and sharing your preserves
- Make sauerkraut, jams, pickles, salsa, chutney, relish, fruit butter, ketchup, and more
- Learn to use a pressure canner to preserve lower acid foods
Discover a fun hobby steeped in tradition and take home a wealth of new skills, along with a recipe packet and many of the preserves made during the weekend.

Things To Bring
Faculty asks that you bring an apron, your favorite knife, and a cutting board with you to the course.

Accommodations cover your room, all meals, and use of amenities and facilities—which includes optional classes, evening performances, sampler classes (during the week), the lake, walking trails, parking, and all other guest services. A list of local hotels and inns is available for those who wish to stay off-campus and commute (see Commute below).

Refunds are available (less a $50 processing fee) up to eight days before your program or stay.
Nonrefundable credit toward a future Omega program or stay (less a $50 processing fee) is available if you give notice between seven and one day(s) before your program or stay. Credit may be applied to any Omega program or stay for one year following date of issue.
No credit or refund is available if you cancel on the arrival day; if you do not show up; or if you leave an event early for any reason. No refund will be available if you attend a program and are dissatisfied with its presentation or content.
