Peach & Lime Salsa

Peach & Lime Salsa

What could be more delicious than fresh peaches? This recipe for peach salsa can be eaten with tortilla chips or used on fish, chicken, or quesedillas. 



2 cups peaches, peeled and diced
1 cup red bell pepper, diced small
3 tablespoons red onion, diced small
3 tablespoons fresh lime juice
1 teaspoon lime zest
2 tablespoons fresh cilantro, chopped
1 jalapeño chili, minced
1 teaspoon fresh ginger, minced


Gently incorporate the ingredients in a bowl and season to taste with salt and freshly cracked black pepper.
