Stuffed Date Appetizers

Need an appetizer that will wow your guests? Try these stuffed dates with both sweet and savory flavors.

According to Ayurveda, dates are considered to be a superfood because they help to nourish the ojas (our essential energy and life force). Modern nutrition science says that dates are high in minerals, vitamins, antioxidants, and fiber. They're also deliciously sweet and quite filling. Look for the two most common types at your local grocery store—Medjool and Deglet Noor—and try serving these nutritious and satisfying stuffed date appetizers at your next event.

Makes 4 stuffed dates

Ingredients

  • 12 Medjool or Deglet Noor dates

  • Almond Coconut (vegan)

    1 1/2 tablespoons almond butter
    1 tablespoon coconut flakes

    Slice 4 dates lengthwise and remove the pit to create a cavity for the almond butter. Stuff dates with almond butter and sprinkle with coconut flakes

  • Goat Cheese & Chopped Almonds

    1 1/2 tablespoons goat cheese
    1 handful of chopped almonds
    1 teaspoon lemon zest

    Slice 4 dates lengthwise and remove the pit to create a cavity for the goat cheese. Stuff dates with the cheese and pieces of chopped almonds and sprinkle lemon zest on top.

  • Tahini Pomegranate (vegan)

    1 1/2 tablespoons tahini (sesame seed butter)
    1 handful of dark chocolate chips
    1 handful of pomegranate seeds

    Slice 4 dates lengthwise and remove the pit to create a cavity for the filling. Stuff dates with tahini and 1-2 chocolate chips and 2 or more pomegranate seeds.

Directions

  1. Serve on a platter by themselves or add them to a cheese and fruit plate for some extra wow factor when hosting guests.

    Note: This recipe is easy to double or triple for a large gathering.
