Summer is all about using fresh ingredients to create delicious salads. This affordable, vegan side dish features cabbage, which is rich in vitamin C, fiber, and potassium. The avocado dressing offers healthy fats and gives the salad a creamy texture without using mayonnaise.

Ingredients

  • Slaw Ingredients

    6 cups red or green cabbage, cored and shredded (about 1 cabbage)
    1 carrot, shredded

  • Dressing Ingredients

    2 limes, juiced
    1/2 tablespoon apple cider vinegar
    2 tablespoons extra virgin olive oil
    1/2 teaspoon sea salt
    1/4 teaspoon pepper
    2 ripe avocados, mashed

Directions

  1. Place cabbage and carrot in a large serving bowl. In a small bowl, whisk together lime juice, vinegar, oil, salt, and pepper. Stir in the mashed avocado until you get a creamy consistency. Toss cabbage mixture in the large bowl with the dressing. Serve at room temperature or chill for an hour and then serve.
