Mexican Corn Pasta Salad

This robust pasta salad captures the essence of Mexican street corn with its creamy dressing and tangy blend of lime, chili powder, Cojita cheese, and roasted corn. It’s easy to make, packs well for picnics, and is likely to become the star of your next get-together.

Makes six 6-ounce servings


  • 1 cup fresh corn kernels, roasted
    2 cups elbow macaroni, cooked
    3/4 cup red bell pepper, diced small
    1/2 cup green onions, chopped 
    2 tablespoons jalapeno pepper, chopped
    3 tablespoons Cojita cheese, crumbled
    1/2 bunch fresh cilantro, chopped
    2 heaping tablespoons mayonnaise
    2 heaping tablespoons sour cream
    1 tablespoon lime juice
    1/2 tablespoon chili powder
    Salt and pepper, to taste


  1. In a large bowl, add sour cream, mayonnaise, lime juice, and chili power; whisk until well blended. Season with salt and pepper.

    Add the cooked pasta and remaining ingredients. Mix well to combine. Taste and adjust seasoning as needed.
