Chocolate Vegan Ice Cream

Summer is the perfect time to indulge in a bowl of cold, tasty ice cream. But if you are looking to avoid dairy or refined sugar, this vegan version is the perfect substitute. Bonus: you can make this sweet treat right in your blender.

Serves 1-2

Ingredients

  • 1 large frozen banana
    1 tablespoon unsweetened cocoa powder or raw cacao powder
    1/2 tablespoon cacao nibs (optional)
    1/2 tablespoon almond butter (or other nut or seed butter)
    2-3 tablespoons coconut milk

Directions

  1. Combine all ingredients in blender and blend on low to medium until a smooth ice cream-like consistency is formed (about 1 minute). Start with just enough coconut milk to mix and add a little more until you have your desired consistency. Enjoy immediately!

    Topping Ideas: raspberries, strawberries, sprinkles, chocolate chips, chopped pecans or walnuts, hot fudge, vegan whipped cream
